Vegetable muffins (Muffins di verdure)
In this warm weather I'm not in the mood for cooking very
complicated dishes, but then again I'm a little greedy when it comes
about food, so I'm at it again! :D
For this recipe, I chose once again a lighter way of cooking, still
preserving the taste and freshness of the ingredients!
Ingredients per 4 muffins:
Etichette:
antipasti,
carote,
carrots,
courgettes,
muffins,
peas,
piselli,
vegetables,
zucchine

Courgette flan (Sformato goloso di zucchine)
This is courgette season and in my family, we enjoy eating them in every possible way! I personally like them a lot, I find them very
versatile and light! Their flowers are rather delicious too and
probably one of my favourite dishes, but this is a story I'll save for
another post!
So, here's a tasty recipe to enjoy on a breezy and warm summer night!
1 medium size onion
2 eggs
40g parmesan cheese (adjust to your liking)
1 mozzarella (around 125g)
10 small mint leafs
white wine

Cherries and yogurt cookies (Biscotti di ciliegie allo yogurt)
6.30 pm
Today I received a parcel from my parents: a wicker basket full of delicious cherries!
They come from Puglia, the region I come from and also the main producer of cherries in Italy!
They're juicy and incredibly tasty and at first I was very tempted to eat them fresh, but instead I decided to make something with them!
I was inspired by a recipe I found a while ago but I decided to change it a bit!
So there you have it, cherries and yogurt cookies! :)
This is what you're gonna need:
280g plain flour
1 tablespoon (15 g) aluminum-free baking powder
50g brown sugar
30g almond flakes
90g unsalted cold butter
1 small pot plain yogurt (around 125g)
130g cherries
1 pinch of salt
